Sugars in the Root of the Carrot.

There is a lack of agreement in the literature as to whetlher or not fructose occurs in the roots of the carrot. Apparenitly the reducing sugar is thought by many to be composed largely or entirely of glucose, and that little or no fructose is present. Sucrose and glucose have been reported by DIETRICH (5), RITTENHAUSEN (5), PLATENIUS (8, 9), BARNES (1), and WERNER (14). Sucrose was identified by SCHMIDT (5) anid glucose by BUSHOLT (5). Sucrose and reducing sugar were reported by MYERS an1d KROLL (5), and sucrose and invert sugar by KRISTOFFERSON (5) and by WEHMER (13). Whenl reducing sugars are reported by these workers, no conclusion can be drawn as to what the workers considered the sug,ars to be. KRISTOFFERSON (5) and WEHMER (13) are the only ones to report the reducino sugars as being "invert sugar," and thereby indirectly to admit the presenee of fructose. Anialyses of two commercial varieties of carrots were made in the present study to determine the possible presence and amounts of fructose.
